A worked example
Take a $60 order in New York City.
Grubhub: At the top of the published range, commission plus processing can approach $18 to $20 of a $60 order once marketing and processing are counted, leaving the restaurant roughly $40 to $42.
Bobby (being built): With Bobby the fee is a flat $2 on that order whatever its size. The restaurant keeps the full $60 and the customer pays $62.
Grubhub breaks its restaurant cost into a marketing commission and a delivery commission, bundled differently from one plan tier to the next, with the combined figure usually landing in the 15 to 30 percent range of the order total. On top of that comes a payment processing fee of roughly 3.05 percent plus 30 cents per transaction, and then optional sponsored-listing spend on top of that again.
Since each layer is a percentage of the order, the whole thing scales with the ticket. Two orders that take the same effort to fulfil get charged very different amounts when one is larger, and the processing fee piles on either way.
